How fun are fortune cookies? Little almond-flavored wafers folded around a message, don’t you miss them?
The only gluten free ones I’ve found available to purchase aren’t actually edible, they are reusable. As fun as that is, I’d like the satisfying CRACK followed by a fun cryptic message.
You must work quick with these. They firm up as they cool, so you must fold them while they are hot.
I like to use a glass to help me with the shaping and pop each cookie into a waiting muffin tin to help it hold its shape while the next batch are baking.
Because you’ll need to fold them hot, just bake one tray at a time, and get the next tray ready to go in once you pull one out to shape.
Have some fun with the fortunes - make it work for you! Tell a joke, give some “lucky numbers” or find a fun quote. It’s the best part of the cookie.
Also, these keep for a while, so if you’re having friends over for dinner, make them ahead - what a fun surprise! I like to add them to my kid’s lunches - every kid nearby loves to find out what they say!
