I have doubled this with great success! The 2 9 inch rounds here are equivalent to 24 cupcakes, or a thick 13x9 (quarter sheet). The size of your pan will affect the cooking time- larger pans taking longer. You should still look for the same internal temperature when done- I find that really helpful when making size adjustments!
