Spring over here has SPRUNG and I know some of you are like Rachel, we had strawberries in February over here and we’ve moved on to tomatoes now.
Here’s what I’ve been LOVING lately. But if you have gone past the season, just replace the asparagus with tomatoes in these recipes mmmmkay…
and blueberries for strawberries here-
Spring is also a FLURRY of fabulous events, graduations, parties, end of school activities, sports events, mother’s day, etc. So I have a few gluten free products that have been making my life easier.
Lotus Foods sent me an AMAZING package with their rice/millet ramen, their new wide rice ramen, an adorable set of travel utensils and a thermos big enough for ramen on the go. We LOVED the new wide rice ramen. It reminded me of the squiggly noods at Trader Joes everyone is always going on about.
I made them with homemade trash stock, garlic, tamari, sriracha, leftover chicken, peas, green onions, and soft boiled eggs. AMAZING and quick. (Would you like the recipe for trash stock? It’s a staple in our house, basically free, and I’m not sure what I’d do without it.)
I FINALLY got to try Goodles Noodles. The pasta has been all over the place, but I’ve had a hard time getting my hands on the gluten free line. Costco near me started carrying a multipack and I must say the Loopdy-Loos are absolutely perfect for mac & cheese, and mac & cheese is perfect for a busy spring.
Pacha brand sent me a box of their organic sprouted buckwheat sourdough bread, english muffins and tortillas. I thought the “rye” bread was super reminiscent of real german style rye, or those little square cocktail rye breads you see! Dense and flavorful and really nice toasted. I think toasting up little triangles and serving with a reuben dip would be a really fun appetizer for a party!
I have to say, I am the owner of the worlds BEST banana bread recipe. No really, my Grandma had to wait years before a friend would tell her the recipe and it’s been handed down through the family since. My son LOVES teasing my husband that he doesn’t know the “secret.”
So needless to say I’m a bit skeptical of all other banana bread recipes, but y’all I’m a busy girl and my kids decided to give Go Nanas banana bread mix a go. I have to say, I’d never vote any mix better than Grandma’s and I DID make the boys add 2 eggs to give this more structure. But boywas it nice to have them treat me!
What am I reading?
I do love a spring hammock read. There is a family of doves that builds a nest above my hammock every year and it’s the most relaxing corner of the world.
Recently I’ve been reading The Secret War of Julia Child. It’s a fun novel based on Julia Child’s time as a spy in WWII.
