What one gluten free recipe would you request?
I am thrilled with how these turned out!
The recipe below requires a quick step before making the main dough, the first 4 ingredients are pre-cooked either in the microwave or stovetop to create a lush texture that it’s hard to find gluten free! I’ve used the same technique that I did when making my Best Soft Gluten Free Sandwich Bread which you can see here.
This dough actually has SO many applications, I can imagine it turning into all sorts of pastries so it’s a great one to get the hang of. I’ve filled it with strawberry jam here, but maybe you prefer orange marmalade, or Nutella? Cherry jam more your speed or cream cheese filling? You could even follow
of Bread In 5 and fill yours with goat cheese and pistachios?The shaping step is so simple here, I like to use a bench scraper to divide the dough into pieces and then roll them like a 5-year-old with playdough would into balls. The balls will puff and relax as they rise so that when you come back to make the depression for the jam with either your hands or a spoon, it will easily form itself into a well to fill with the jam.
I’ve assumed here that you are using store-bought jam, but if you’re a canner or went to the berry farm and have tons of jam hanging around that’s even better. I like to make my strawberry jam by simmering equal parts by the weight of berries and sugar until it coats the back of a spoon.

Gluten Free Strawberry Danish

7Tb (50g) gluten free one to one flour (King Arthur Measure for Measure, Bob’s Red Mill 1 to 1, etc)
4 tsp (15g) sugar
½ cup (125g) milk or nondairy milk
4 tsp (20g) butter or nondairy stick butter
3 ¾ cups (450g) gluten free one to one flour (King Arthur Measure for Measure, Bob’s Red Mill 1 to 1, Cup for Cup, Caputo Fioreglut, Better Batter Original Blend have all worked well)
2 tsp (10g) salt
¾ cup plus 2 Tb (200g) milk or nondairy milk
3 large eggs plus one for an egg wash if a glossy exterior is desired
1 Tb (10g) instant yeast
5Tb (75g) butter
2 ½ Tb (50g) honey
1 tsp (5g) baking powder
10g psyllium powder ( Terrasoul psyllium husk powder was used in testing)
12 oz strawberry jam
pearl sugar, sanding sugar, powdered sugar, or sprinkles if desired
