We all need a treat sometimes, and often I’m drawn to creating recipes for the things I remember loving as a child, or possibly something my children see other people enjoying and they wish to try. Sometimes I come quite close to the original, but every once in a while I create something that is a whole lot better. The recipe I have for you today is a whole lot better.
It’s still brownies, with a ganache on top a colorful candy coated chocolate chips. But the brownie in my lunch box was never this lush. The chocolate was never this deep and satisfying and the ganache didn’t feel like a truffle explosion!
This brownie is so rich because it’s based mostly on melted chocolate, with just a small amount of cocoa powder and gluten free flour blend to hold it together. The crinkly shiny top is a sign that I stirred the eggs enough in the batter, although I’m going to cover it up with ganache, it’s a comforting sign that it’s there.
The fudgy middle of these brownies can be hard to cut nicely, but if you pop the pan into the fridge, you’ll get a cleaner edge on your pieces (do you care? why do I care? It’s brownies. Oh yes, pictures)
The base recipe I’ve used here is one that I learned from a chef at a cooking school I used to work at - although I’ve modified it to be gluten free. He made them many different flavors, peppermint, mocha, even with a chipotle pepper mixed in. All variations were beloved. I’ve added the ganache to quench my craving for nostalgia.
If you can’t find gluten free candy coated chocolate chips you can use another candy coated chocolate candy, you know the ones.

Gluten Free Galaxy Brownies
This recipe is the fudgy decadent style of brownie, definitely not of the cakey variety. They are based on the colorful lunch box brownies with a space based name of my youth. The recipe is based on the brownies a chef friend bakes in abundance, and after our kitchen went gluten free they are one of the treats I missed! They are great with or without the ganache topping but really, why not!
170g (¾ cup) unsalted butter (or nondairy stick butter)
113g (4 ounces) dark chocolate, chopped or small pieces
300g (1 ½ cup) granulated sugar
4 eggs
8 g (2 tsp) vanilla
12g (2 Tb) cocoa powder
3g (½ tsp) salt
148g (1 cup) gluten free one to one flour (ex. King Arthur Measure for Measure, Bob’s Red Mill 1 to 1)
113g (4 ounces) dark chocolate, chopped or small pieces
56g (¼ cup) heavy whipping cream (or canned coconut cream or nondairy whipping cream)
Candy coated chocolate chips or candy coated chocolate pieces to decorate.
Heat oven to 350F. Butter or line a 13 x 9 inch pan with parchment paper. In a medium saucepan over low heat or in 30 second bursts in the microwave melt the butter and 4 oz chocolate together, stirring often. When melted, and add the sugar, vanilla and eggs. Stir in flour, and remaining ingredients. Pour into prepared pan and bake 30 minutes until the top is shiny, and toothpick inserted into the middle has wet crumbs (not batter) on it. Cool for 30 minutes.
Melt the remaining chocolate and whipping cream together over low heat stirring constantly OR in 30 second bursts in the microwave stirring frequently. When the ganache has melted together and is smooth, pour over the cooled brownies. Sprinkle candy coated chocolate chips over the top and let cool completely before slicing.
