These look great, Rachel! Just wondering if you have made them with any of the off the shelf GF flour blends or if they are best with the individual flours in your recipe.
Hi Kate thanks so much for reading! Just recently I made these again but I used Bob’s Red Mill one to one and I left out the xanthan gum recipe- it worked well! I used weight measurements. Actually- I’ll update the recipe with that info!
I have something called “glutinous rice flour” and am wondering if that is the same or close enough to sweet rice flour. Also, I have tapioca starch—same or close to tapioca flour or not?
Hi Scott - I think your ingredients will work well here, glutinous rice flour and sweet rice flour are the same thing so that will work. Tapioca flour and starch are also one and the same! It's confusing that some brands call it "starch" and some "flour" but luckily they are all the same thing!

When using the 1 to 1 Bob Mills flour do you also omit the xantham gum?
I still add the xanthan in this case you need a higher percentage!
