Not a Grocery Store Chocolate Chip Cookie Cake

Hello friends,

Did your mom ever drop you at the mall?

Maybe malls don’t exist where you live anymore (unless you’re from Minnesota) but that begs the question, what happened to all of the big cookie/cookie cake chains?

Wide chocolate chip sweet cookies cut like a pizza - are they relegated to grocery stores now? Regardless I NEVER encounter gluten free ones.

This gluten free version made at home is easy peasy, and you can dress it up however you like. Write happy birthday, happy divorce, congrats on the new puppy in the simple chocolate buttercream.

I’ve designed it for a classic 9-inch round cake pan, but it doubles and even triples beautifully if you want a HUUUUUUGE one.

It reminds me of the ones I ate at a mall lock-in in the early 90’s with hundreds of girl scouts (what adults signed up to be the chaperone for that??? nightmare!)

This cake makes a great birthday or other celebration cake, but is also VERY freezable, so why not make one for later?
