Hi friends,

Before we get started, with our recipe today, would you like to do some gluten free travel with me? I love to travel and I’ve been toying with the idea of a gluten free tour. Now, back to it.

This gluten free yellow cake is SO easy.

But it is SO lush.

This recipe was requested by a student in my Gluten Free Bread Workshop - a classic squishy delicious yellow cake recipe - gluten free.

I understand the need! It seems there are more great gluten free chocolate cake recipes out there, but what about vanilla?

So, I set out to bring you a really great but really simple one, because when you need cake who has time for a big to do? Not me. Just give me the cake.

This cake has that lush squish between your fork tines quality because it’s an oil cake instead of a butter cake.

I know what you are saying - Rachel I like butter! Me too friends me too, but cakes made with oil have a totally different texture. Butter is only 80-83% oil and the rest is water and butter solids. Those give cakes a flakier “short” texture. That’s wonderful in some cases but not at all what we want here. We want soft fluffy yellow cake.

Using oil in the cake also makes it SO easy. Just plop everything in the bowl and stir.

I’ve also added not only a gluten free flour mix, but a small amount of starch as well. This makes the cake fluffier and softer. Oh yeah.

You can layer this up and frost it with chocolate buttercream, or have some fun with powdered sugar as I have here, you can even use this same recipe for simple cupcakes or sheet cakes.

This recipe is what you were hoping gluten free cake mix tasted like (but sadly, does not) It’s not much more complicated than a cake mix but so much tastier.
