A hand-rolled pasta that requires nothing but a bowl, a spoon, and your hands. This is for the person who’s not sure if they are ready to commit to a pasta machine yet. Also… the ingredient list is really simple.
I’m showing you this super simple shape Trofie that’s easy to accomplish for masters and beginners alike, but there are so many pasta shapes you can make, many that don’t require a machine. If you’re just dipping your toe into the pasta-making waters these “stubby spirals” as
calls them is a great place to start. (Although, it’s super fun and delicious to make homemade pasta so if you’re anything like me you’ll be hooked and buying a pasta machine in no time!This is a shape I make often with my kids, employing their small hands and abundant energy for much of the work - pasta is more fun to make with others. In the absence of children, it’s a great dinner party activity/food. People love to get their hands in the dough and no matter what, dinner party guests always insist on hanging around the kitchen, so why not put them to work?
I’ve paired it here with a pesto, as well as potatoes and green beans, a classic. The shape of the noodles creates little nooks and twists to house pockets of pesto. That’s my favorite part!
The recipe I have for you below has a ratio of 150g of flour to 2 eggs, that’s slightly higher in eggs than is traditionally used for wheat flour pasta, and is a ratio that I find to consistently work for gluten free pasta. For small hand-rolled shapes, I find this mixture works well, for larger, thinner, filled, or machine-rolled shapes I add xanthan gum for more strength.
