What better way to highlight the beautiful fruit of summer than enveloping it in a flaky gluten free crust?
This freeform pie is the answer to BBQ and patio desserts, it’s faster than a traditional pie, and thanks to the strong yet tender crust can stand on its own without a tin.
The combination of the xanthan gum in the one-to-one flour blend and the small amount of psyllium is the magical pixie dust that makes this crust easy to roll out and shape, unlike most gluten free pie crust recipes this one does not fall apart!
I’ve used this crust to make traditional pies, freeform galettes like this one, pop tarts, savory hand pies and so much more!
I like to roll my pie crust out on a piece of parchment paper, which allows me to make a pile of fruit in the center while it’s still on the paper, then just use the paper to fold the dough over the edges.
Then I slide the entire thing on paper and all onto a sheet pan! Voila!
The wonderful thing about summer is that it is so good you don’t need to do much to it I have to remind myself to keep it simple and just get out of the way of the gorgeous flavor.
This is the perfect balance.
