I spent several days studying with master pizzaiolo Fabio Christiano working on different gluten free methods and techniques.
The devil it turned out, was in the little details
After I returned home I put what I learned to use, working with the ingredients that I can access in the U.S. and with my home equipment.
I’m so happy to say it paid off!
I have been able to replicate the amazing gluten free pizza, (and calzones, and pizza sandwiches, pizza fritta and other variations)!!
