Here we are, it’s finally gingerbread season!! Get ready for hot cocoa, fireplaces, twinkling lights and no longer hiding your holiday music. Gingerbread houses are one of the absolute highlights of the season and when I asked you in some Instagram surveys what you’d like to see on Next Level Gluten Free? Gingerbread Houses appeared more than any other answer. I know why.

A cooking school I worked at more than a decade ago (how can that be?) had HUGE gingerbread house making parties all December long. Each weekend we’d run 2 per day on Saturday and Sunday filing hundreds of house makers through that place. It’s been years since they stopped doing them, but gosh they were memorable. Huge families and groups of friends would come every year and they were so creative. I once saw a man mold an extremely large amount of tootsie rolls into a gigantic tree and make his house into a replica of the Swiss Family Robinson tree!! Others created modern architecture or intricately piped victorian homes. It’s amazing what you can do with the same pieces of gingerbread.
