This recipe was requested by a frequent attender of my cooking classes! She missed a run to the bagel shop for an easy brunch or a chewy easy breakfast. As a long time bagel lover - I was IN!!
What is the one gluten free recipe you would request?
When I was 10 years old my parents had to have an intervention with me. Apparently I had been eating so many garlic-flavored freezer bagels that I had started to reek of garlic - like I sweat garlic and my skin had a faint whisp of garlic all the time. Puppies loved me.
They told me I had to be a bit more moderate in my bagel consumption! Fast forward a few years and finding a gluten-free bagel worth binging on is nearly impossible! (Unless of course, you live near a Modern Bread and Bagel - lucky you!)
Unfortunately, my city doesn’t boast a gluten free bagel bakery as of yet, and I’ve had a variety of supermarket gluten free bagels, but they just don’t have quite the texture and flavor I’m looking for.
What I have started doing is baking a large batch of gluten free bagels and stashing many in the freezer for future weekday mornings. Although you can eat them all at once - if you like a brunch spread with smoked salmon and trout, billows of cream cheese, and chewy bagels - throw a party this is the recipe for you! By the way, as pedestrian as it seems
of writes that cream cheese was initially a luxury product costing twice as much as domestic cheeses and even more expensive than parmesan!Making a gluten free bagel with the right crumb and chew took SO MANY TESTS. I made so many sad dense bagels, overproved bagels, flat sad bagels and bagels that are not good enough for you. But I got there!
