Today I have a cookie/confection recipe for you that is one of my husband’s favorite childhood holiday treats.
Chocolate salami is not to well known in the Midwest U.S. were I live (at least in my experience). It is wildly popular in Romania where my husband is from, and actually in quite a few other European countries.
It’s not actually salami.
There is no meat involved here.
This is a no bake cookie/confection that involves cookies, chocolate, nuts, sometimes dried fruits, sometimes rum or other liqueurs or extracts.
It does look like salami though! Especially when you slice it.
Which is fun. We usually make this around St. Nicholas day. It accompanies the presents and sweets left in the shoes we shine and leave by the door.
Or near the shoes, as young boy shoe odor dictates.
But it also makes a WONDERFUL quick and easy no bake Christmas dessert or gift for a friend. I’d attach a little note explaining the “salami.”

Chocolate Salami
Yield: 1 12 inch log (approximately 24 slices)
4 ounces (120g) dark chocolate
¼ cup (57g) milk
1 Tb (13g) dark rum (optional)
8 Tb (113g) softened unsalted butter
¼ tsp (2g) salt
2 cups (100g) broken gluten free vanilla wafers, graham crackers, amaretti or animal crackers (finally, a recipe were the broken gf cookies are what we WANT!!)
¼ cup (30g) powdered sugar
¼ cup (21g) cocoa powder
¼ cup (29g) finely chopped walnuts
¼ cup (30g) powdered sugar
Melt the chocolate, milk, rum and butter in a microwave until smooth, in 15 second bursts, stirring between each. Break the cookies into small pieces and place in a large bowl, add the cocoa powder, sugar, and nuts.
Pour the melted chocolate mixture over the dry ingredients and stir to combine well. Pour the mixture onto a piece of parchment paper and roll up into a 12 inch log. Wrap well and refrigerate at least 4 hours or overnight.
Remove the log from the fridge, roll the unwrapped log in the remaining powdered sugar. Slice and serve or store in the fridge.
