These lush and tender festive treats are so much fun.
Tender brioche-style dough swirled around a cream cheese filling with happy little sprinkles on top. That’s a birthday breakfast I can get behind.
You could of course reserve these for your birthday, but why? Celebrate every day.
The dough is one that doesn’t require a lot of steps and works well either in a stand mixer with the cloverleaf flat attachment, or by hand. I do mean using your well-washed hands and a bowl. The thick dough is a bit much for a wooden spoon.
When you are rolling out the dough I like to do it on parchment paper or a large tea towel - make sure either is well-floured and you don’t want the dough to stick. When you go to roll up the spiral lifting the paper or cloth will really help you get a clean tight roll.
Make sure you use the thermometer to check when these are done, sometimes it’s hard to tell from the tan exterior and a fluffy not gummy baked through roll is so much better with the creamy filling.
