I’ve had a slew of requests from readers for grain free and yeast free bread. So here’s a delicious answer.

This is an easy gluten free bread that you can whip up in a flash, or freeze and pull out anytime you want. You know what else is great? You only need one grain free flour for this - not a complicated blend.
Just one.
I love that this traditional bread was developed not for the gluten-free community, but already existed in yucca/tapioca-rich Brazil.
recommends adding a Brazilian spice mix of “1½ tbsp (4½ tsp) dried oregano, 1 tbsp paprika, 1½ tsp cumin, 1½ tsp black pepper, 1½ tsp ground coriander, 1½ tsp dried thyme, 1½ tsp dried basil, ½ tsp onion powder, ½ tsp garlic powder, ¼ tsp cayenne pepper, and ⅛ tsp nutmeg” and that sounds delightful to me!I love teaching classes with this dough - it’s SO versatile. You can make it into small rolls as is traditional, or roll it out and use it to make empanadas, you can make a stellar pizza base with this dough - light and fluffy. It also can be shaped into baguettes or hoagie rolls, you can even fry it instead of baking it for wonderful donuts (traditionally served with honey!)
