These soft almond cookies stuffed with a pop of fruit are one of my favorite holiday cookies.
They are a surprisingly flavorful mouthful, much more than say packaged amaretti cookies. The texture is also much softer.
They are kind of like macaron’s rustic cousin, they can be made without the cherry but, at that point I’d ask….why?
These use one of my favorite ingredients, amarena cherries. I get questions about them every time I use them.
YES they are worth the price. Save the jar and use it for a flower vase.
After you’ve made the cookies use the rest in your crepes, ice cream, tarts, or just eat them out of the jar, I won’t tell.
If you really ARE anti cherry, you could always use a chunk of chocolate instead, I’d come over to eat those.
