sends out a dinner plan with 5 nights of easy, 30-minute meals. These recipes can accommodate gluten free and dairy-free dietary restrictions. She always includes a little bit about her week, some of her favorite products she’s been buying lately to make mealtime easier, and a link to her podcast where she talks through one of the easy dinner recipes from the meal plan each week! We love her Cheddar Jalapeno Chicken Burger. We make them on my crazy simple Gluten Free Sesame Hamburger Buns. The burger is part of this awesome weekly meal plan!Products I’m Loving:
Tate’s Bake Shop Gluten Free Chocolate Chip Cookies. These crisp and buttery chocolate chip cookie makes the BEST s’mores for our neighbor’s famous firepit nights. They are just so much more delicious than any of the gluten free graham crackers I’ve purchased and they hold the chocolate and marshmallows together so much better!
The Tate’s cookies are also the perfect texture for ice cream sandwiches, after an hour or so in the freezer with the ice cream the cookies soften to the perfect texture! - add some chocolate chips to the outside and you have yourself a gluten-free chipwich!
What Have I Been Up To?
Well friends, besides this wonderful newsletter and my gluten free cooking classes I’ve also been working with the Culinary Medicine team at The University of Kansas Hospital for the past year. I’ve been teaching hands-on cooking classes for medical students.
This innovative program spearheaded by allergist Dr. Marissa Love combines evidence-based medical knowledge with practical cooking techniques, aiming to prevent and manage chronic diseases through nutrition.

Gluten Free Baking Tools:
Baguette pans and Italian bread pans are great for helping to keep gluten free bread dough in the correct shape when rising and can even be used when baking! Getting the long fragile breads in the oven is a snap when you do!
Gluten Free Baking Tips:
Gluten free muffins soar to higher heights and form a large “hill” when baked at a high temperature for the first few minutes. Check out my Gluten Free Olympic Triple Chocolate Muffin recipe for a (delicious) example.
